How it all works...

Inspiration

The inspiration for a new coffee comes from either an appellation in Lavaux, or from a winemaking region such as Bordeaux or Nappa Valley

Research

Once an appellation or region is selected, we'll begin researching certain elements, and talking to experts in this field.

Selection

This step involves selecting the green coffee, which is a mixture of cupping, flavour profiling, and research into the origin.

How does the green coffee compare to the wine region/appellation?

  • Advice & insights from our partners

Production

We'll work with our importing partner to bring the green coffee to London, where we begin perfecting the roasting profile via cupping sessions.

Once satisfied, we'll start producing a new, exciting LAVAUX Coffee for our community to explore!
